Made from rich Jersey cow milk in the fashion of an Italian-style toma, this cheese is accordingly simple, satisfying, and perfect for everyday eating.  After four to six months of aging, the wheels are nutty, tangy, sweet, and grassy.  Enjoy with a crisp apple, some freshly sliced prosciutto, and a handful of hazelnuts.
