Modeled after Spanish Manchego, this cheese is rich and nutty with a friable texture and a pleasing aroma of savory brown butter.  It’s produced seasonally between February and September in correspondence with the ewes’ milking cycle.  Perfect with a sweet fig preserve and a robust bottle of red wine.
